Leftover Turkey Curry
Kids loved this recipe and it ment no wastage after Xmas day.
My ‘ thrown together’ leftover Xmas turkey recipe!
Turkey Curry (mine served about 8)
All left over turkey
Two tablespoons of medium curry powder
Teaspoon cumin
Teaspoon tumeric
2 onions
3 garlic cloves
2 chicken stock cubes and a Tablespoon of granuals
Quarter cup of sultanas
3 tablespoons oyster sauce
2 tablespoons soy sauce
Half a cup of cream
3 tablespoons coriander
Rice and crusty bread to serve
There were no rules of organisation to this recipe.
I chopped up the onions and garlic and put into a pan with olive oil and fried them for 2/3 minutes.
I added the curry powder, cumin, tumeric, stock cubes and a pinch of salt and pepper and fried them together for about 5 minutes.
I then added the turkey and sultanas and pour in enough water to cover the meat.
I then added the oyster and soy sauce, brought to the boil and then left simmering for 20 minutes.
I then added the cream and coriander and served with crusty bread and rice……. Yum yum!!!!!
I add a bit of chilli to mine but that depends if you like your food with a kick.
Depending on how fussy your kids are add mushrooms, mangetout, peppers or anything you fancy!
